Rum Raisin and Chocolate Delight Cake

Rum Raisin and Chocolate Delight Cake recipe

This cake is not ground breaking with distinctively bizarre textures or flavor combos. However, it has been purposely created to bring to live Cadbury’s Old Jamaican Rum N’ Raisin chocolate block into cake form.

To hero the chocolate I have used Cadbury’s Old Gold dark chocolate, for the Rum a popular Jamaican brand and for the raisins I ensured lots and lots of rum was absorbed in them for little flavor bombs.

 

Ingredients:

Cake:

  • 180g butter
  • 300g caster sugar
  • 2 tsn vanilla essence
  • 3 eggs
  • 170g self-raising flour
  • 65g plain flour
  • 85g cocoa powder
  • 1/2 tsn bicarbonate of soda
  • 2 tsn instant espresso coffee granules
  • 80ml water
  • 85ml milk

Rum syrup:

  • 110g raisins
  • 140g Jamaican rum
  • 80g sugar

Mousse:

  • 200g dark chocolate
  • 40ml reserved syrup
  • 2/3 cup thickened cream
  • 1 tsn gelatin
  • 65g icing sugar

Ganache:

  • 100g dark chocolate
  • 100ml thickened cream

 

Method:

  1. Preheat the oven to 180c degrees and line a 25cm round cake tin with baking paper.
  2. Using electric beaters beat the butter, sugar and essence for 5 mins or until it is light and fluffy.
  3. Add in the eggs one at a time and ensure you beat thoroughly between each addition.
  4. Sift in the flours, cocoa powder and bicarbonate of soda into a bowl, mix.
  5. Add the coffee granules to the water, then add the milk, stir.
  6. Add the flour mix and coffee mix into the butter mix and fold until combine.
  7. Pour the mixture into the prepared tin and bake for 1 hour or until a skewer inserted in the center comes out clean.
  8. Once cooked leave the cake in the tin for 5 mins, then invert onto a cooling rack to cool.
  9. Meanwhile make the rum and raisin mix by placing the raisins, rum and sugar into a saucepan and stirring over a simmering heat for 5 minutes.
  10. Drain raisins (reserving the syrup for later) and chop up the raisins.
  11. Make the mousse by placing 1/3rd cup cream on a bowl and microwaving for 1 minute or until simmering, remove from the microwave and add the chocolate. Allow to sit for 1 minute then stir until smooth.
  12. Add 40g of the reserved rum syrup to the chocolate mix, stir then set aside to cool.
  13. Add the gelatin to the water and stir until well combined with no lumps.
  14. Beat with electric beaters the remaining cream, gelatin mix and sugar until soft peaks form.
  15. Add the chocolate mix to the cream mix and beat until combine and peaks form, place in the fridge until required.
  16. Make the ganache by placing the cream on a bowl and microwaving for 1 minute or until simmering, remove from the microwave and add the chocolate. Allow to sit for 1 minute, stir until silky smooth.
  17. To assemble the cake cut the cake into 3 layers horizontally.
  18. Brush the remaining rum syrup over the top of the 3 layers.
  19. Line the original baking tin with 3 layers of plastic wrap and place the first cake layer in the tin, rum side up.
  20. Sprinkle half the raisins over the cake layer and top with half of the mousse, followed by the second cake layer rum syrup side up.
  21. Repeat raisin and mousse layers again and top with the last cake layer rum syrup side down.
  22. Fold the overhanging plastic wrap over the cake and leave in the fridge for 3 hours to completely set.
  23. Remove the cake from the tin by pulling up the plastic wrap and placing the cake only a plate.
  24. Pour over the chocolate ganache and enjoy.

Cocoa Ricotta Mousse Tarts

I have made many versions of chocolate mousse with interesting ingredients, from silken Tofu to Avocado (check out my Healthy Chocolate Mousse Tart and Avocado Chocolate and Orange Mousse Tart recipes) and made unusual icings from Ricotta to Yoghurt (check out my Rubarb Strawberry Yoghurt cake with Lemon Yoghurt Frosting).

Thus from this experience I do know there is always an alternative to fattening cream that can have nutrient and vitamin benefits instead.

Since I was going down the pathway of experimenting with another alternative version of mousse I decided to also use an alternative to chocolate to lower the sugar content.

Standard chocolate mousse is filled with full fat whipped cream, sugar and lots of chocolate. My aim was to use low fat ricotta instead of cream, cocoa with a little sugar and honey to mimic the chocolate effect and add a little Kahlua kick to intensify the chocolate flavor.

I also wanted to make this super easy (all you need to do it place all ingredients in a blender). This recipe is pretty much fool proof, instantly thick and super tasty.

  

Ingredients:

Pastry:

  • 200g flour
  • 100g butter
  • 40g sugar

Filling:

  • 400g ricotta
  • 2 eggs
  • 55g honey
  • 55g icing sugar
  • 40g cocoa powder
  • 3 tsn Kahlua

 

Method:

  1. Pre-heat the oven to 200c degrees and spray a 12 x 7cm capacity cupcake tray with oil spray.
  2. Place all the pastry ingredients into a food processor and blitz until the mix resembles breadcrumbs.
  3. Add 25ml of water and blitz until the dough comes away from the side of the bowl.
  4. Knead dough for a minute and roll out between 2 pieces of baking paper.
  5. Use a 9cm cookie cutter to cut out 12 pastry circles and place in the center of each mold.
  6. Using a fork prick the middle of the pastry and place the shells in the fridge for 30 minutes.
  7. Meanwhile place the ricotta, egg yolk, honey, sugar, cocoa powder and Kahlua into the food processor and blitz until soft and smooth.
  8. Place the egg whites into a bowl and using electric beaters whisk until peaks form.
  9. Fold the chocolate mix into the egg whites and leave in the fridge for later.
  10. Place the pastry shells into the oven for 18 minutes or until the shells start to brown slightly.
  11. Set the shells aside to cool completely.
  12. Spoon the chocolate mix into the shells and enjoy.

Spiced Chocolate Mousse Cake

Ever noticed how chocolate mousse cakes completely melt and fall apart when out of the fridge for longer than 10 minutes?  How annoying! And you try to cut the cake and it either sticks to the knife or turns into a mousse mess? Well I have come up with a spicy chocolate mousse recipe that won’t melt or collapse when you cut it and will keep its shape once sliced.

Additionally to this, the recipe is ever so tasty and has a pleasant hit of complementary spices.

This one definitely exceeded expectations and is a must keep recipe.

Spiced Chocolate Mousse Cake recipe

Ingredients:

Cake:

  • 4 eggwhites
  • 165g sugar
  • 1 tsn vanilla essence
  • 150g almond meal
  • 35g plain flour
  • 1 tsn lemon zest

Mousse:

  • 400ml-thickened cream
  • 220g dark chocolate
  • 4 + 1/2 tsn gelatine
  • 1 + ¼ tsn cinnamon
  • 1 + ½ tsn ground fennel
  • 1 + ¼ tsn ground cloves
  • 1 + ¼ tsn cardamom
  • ¼ tsn chili powder
  • Pinch salt and pepper

Extra:

  • 200ml-thickened cream
  • 1 tbsn cocoa powder
  • 2 tsn icing sugar

 

Method:

  1. Pre-heat the oven to 180c and line 2 x 23cm spring form baking tins with baking paper.
  2. Using electric beaters beat the eggwhites until soft peaks form.
  3. Gradually add in the sugar until stiff glossy peaks form (about 5 mins).
  4. Carefully fold in the vanilla, almond meal, flour and zest until well combine.
  5. Divide the mix between the 2 tins and using a spoon spread out the mix and smooth out the tops.
  6. Bake for 18 minutes or until the tops are slightly golden and soft to touch.
  7. Leave the cakes in the tins until completely cool, and then remove from tins.
  8. Place the cinnamon, fennel, cloves, cardamom, chili, salt & pepper in a saucepan and stir on high for a minute or until you can smell the spices in the air.
  9. Place 1 cup of the cream in a second saucepan and heat on medium until the cream just starts to boil, remove off heat.
  10. Whisk the 4 + 1/2 tsn gelatine into the boiling hot cream until smooth and well combined.
  11. Add the chocolate into the cream mix and allow it to sit for a minute then whisk the cream mix until the chocolate is silky smooth.
  12. Add the spices to the chocolate and whisk to combine. Place aside to cool.
  13. Using electric beaters beat 150g of thickened cream until peaks form.
  14. Fold the cream into the chocolate mix until well combined.
  15. Place one cake on plastic wrap then places the cake with wrap in the cake tin used to cook the cake.
  16. Now spread in the chocolate mix and top with the 2nd cake.
  17. Fold the plastic wrap on top of the cake and place in the fridge for 3 hours to set.
  18. Once set remove from the wrap and carefully place on a plate.
  19. Whip the remaining 200ml cream until peaks form and spread over the sides of the cake.
  20. Dust the icing sugar on the top of the cake.
  21. Hold the plate on a slight angle and dust the cocoa around the sides of the cake, serve.

Healthy Chocolate Mousse Tart

Yep, you read that correctly. No cream, sugar or butter naughtiness. The only ingredient in this that makes it a chocolate mousse technically is the chocolate!

Introducing the high protein, low GI, (depending on the yoghurt brand you use) healthy (low fat) chocolate mouse.

Now this recipe is for a mousse, however the last time I made this I placed the mousse into a sweet short crust tart shell and not one person realised that it wasn’t a full fat chocolate naughty tart.

Such a simple recipe you will never go back to a cream based mousse again!

 

Ingredients:

  • 200g dark chocolate
  • 350g soft silken tofu, drained
  • 2 tsn vanilla essence
  • 1/8 tsn almond essence
  • ½ cup fat free plain yoghurt

 

Method:

  1. Melt the chocolate in a microwave safe bowl on medium in the microwave for 1 minute or until the chocolate starts to melt slightly. With a metal spoon stir until chocolate is smooth and melted.
  2. Place the tofu and essence in a food processor and blend until smooth.
  3. Add chocolate and process until combined and smooth.
  4. Pour mix into a bowl with yoghurt and fold to combine.
  5. Pour mix into a read made short crust pastry shell (see notes) and place in the fridge until ready to serve.

 

Notes:

  • As mentioned I bough a sweet crust already made pastry shell for this. All I did was follow the directions on the pack and once cooled placed the mousse into the shell and then refrigerated.
  • You can also decorate with a cup of mixed berries to serve or with some shaved chocolate curls.
