Banana Hazelnut and Chocolate Bliss Balls

Banana Hazelnut and Chocolate Bliss balls recipe

High protein, healthy good fats (yes it does contain sugar but not a large amount), these bliss balls are super rich and decadent in flavour and texture.
So simple to make with limited ingredients, these treats take a whole of 10 mins max to make.

 

Ingredients:

  • 90g banana
  • 165g hazelnut meal
  • 30g cocoa powder
  • 30g chia seeds
  • 60g brown sugar
  • ¼ tsn salt
  • Cocoa powder, extra
  • Icing sugar, extra

 

Method:

  1. Place the banana, hazelnut meal, chia seeds, sugar and salt into a food processor and blitz until well combine, scraping down the sides of the processor if required.
  2. Place the mix into a bowl and leave in the fridge to set for 1 hour.
  3. Remove the mix from the fridge and roll into balls of 25g each.
  4. Place the extra cocoa powder and icing sugar into a sieve and sprinkle in a shallow bowl, mix.
  5. Ball by ball, place each into the bowl, rolling to cover the mix completely.
  6. Place all rolled balls into the fridge and enjoy!

Coconut, lime and peanuts…when you say this combo to most people they envisage adding some soya sauce and chilli and ‘boom’ you have a homemade satay sauce!

So we know these flavors work together, who says that they need to only work together in a savoury sense. All 3 of these key ingredients are used in sweet dishes just as much as savoury.

I contemplated what format this sweet treat would work best in, a cake, slice, biscuits, flan, ice-cream, you name it. In the end I decided to play with a few options and ended up happiest with coconut lime and peanut balls.

These little treats are really moreish with a lovely lime tang, while the coconut adds a tropical undertone and the peanut butter brings it all together.

Ingredients:

  • 240g plain sweet biscuits
  • 45g desiccated coconut
  • 220g condensed milk
  • 4 tsn lime zest
  • 60g peanut butter
  • 1 tsn coconut essence
  • 40g peanuts

 

Method:

  1. Place the biscuits, coconut, milk, zest, peanut butter and essence in a food processor and blitz until a dough is formed.
  2. Roll the dough into 25g balls.
  3. Place the peanuts into the food processor until fine like breadcrumbs.
  4. Roll the balls into the peanuts then place in the fridge for 1 hour to set.

This bake session was originally planned to experiment with salt and pepper apple crumble spiced oat balls that went through quite a number of iterations before I landed on the flavour combo of lavender, lemon and apple. This flavour mix was so tasty with the lemon and lavender flavours balanced to perfection. The texture though was not ideal and the flavour could have been stronger.

I had grated apples into the mix which took a lot of oats to absorb and dulled the flavours down a little too much.

So I attempted this same recipe again, this time squeezing the apple juice from the apple flesh and ‘bingo’ a significant reduction in the oats and biscuits allowed the flavour strength I was looking for.

These balls are delicious, super easy and take minutes to make with no oven required!

Lemon and Lavender Apple Balls recipe

 

Ingredients:

  • 400g malt biscuits
  • 10g icing sugar
  • 1 tsn ground lavender
  • 1 tsn lemon zest
  • 40g toasted oats
  • 1 tsn psyllium husk powder
  • 4 apples (130g each)

Coating:

  • 10g brown sugar
  • 20g toasted oats
  • 10g walnuts
  • 1/8th tsn ground lavender

 

Method:

  1. Peel the 4 apples with a vegetable peeler.
  2. Grate the apples into a bowl.
  3. Squeeze out the apple juice with both hands into a glass to drink later (yum)!
  4. You should have 140g of squeezed apple flesh in total, place into a food processor.
  5. Add the biscuits broken into pieces, the sugar, lavender, lemon zest, oats and psyllium husk into the food processor.
  6. Pulse the mix until the large lumps have subsided, give it a little stir, then blitz again until well combine and smooth.
  7. Knead the mix ( on a lightly floured surface if the mix is too sticky) on a bench to ensure no lumps then set mix aside in the fridge for 15 mins.
  8. Meanwhile, make the coating by placing the sugar, oats, walnuts and lavender into the food processor until the mix resembles salt grains in size.
  9. Place the mix into a shallow dish.
  10. Roll the apple mix into balls of 25g each then roll each ball into the coating mix until well covered.
  11. Place coated balls onto a plate and continue the process until all apple ball mix is used.
  12. Place the plate in the fridge for 30 minutes minimum to fully set.
  13. Enjoy!

I do love a good chocolate truffle and after eating some the other day I thought that the truffle base ingredients of chocolate and cream leave open a massive opportunity to play with different flavor combos into the plain chocolate mix.

As truffles are super easy to make and the variety of flavor combos and alternative ingredients to use are endless I went experimenting craziness.

Jelly crystals, oils, essences, lollies, candy, zest, dried fruit, jams, purees, cordial, spreads…basically anything I could think of that would add a unique flavor I tried and tested in a standard truffle recipe.

Out of the many many truffle recipes I made up, 3 were significant standouts. These being Peppermint, Mandarin and Pineapple Coconut flavors.

My easy, quick and super tasty recipes below 🙂

Mixed Bag Truffles recipe

 

Ingredients:

Peppermint Truffles:

  • 1/8 tsn peppermint oil
  • 30ml thickened cream
  • 125g white chocolate

Mandarin Truffles:

  • ½ tsn mandarin zest
  • 30ml thickened cream
  • 125g white chocolate

Tic-Tac Truffles:

  • 34g Tic-tac’s (pineapple coconut flavor)
  • 40ml thickened cream
  • 90g white chocolate

Extra:

  • 35g desiccated coconut
  • 35g orange sprinkles
  • 35g green sprinkles

 

Method:

  1. To make the peppermint truffles place the ingredients into a bowl and heat on medium in the microwave for 90 seconds or until the cream just starts to steam.
  2. Allow mix to sit for 2 minutes then stir until well combined and smooth, place in the fridge to set for 3 hours.
  3. To make the mandarin truffles zest a whole mandarin until you get ½ tsn in volume.
  4. Add the mandarin zest, cream and chocolate into a bowl and heat on medium in the microwave for 90 seconds or until the cream just starts to steam.
  5. Allow mix to sit for 2 minutes then stir until well combined and smooth, place in the fridge to set for 3 hours.
  6. To make the tic-tac truffles, place the box of tic-tacs into a saucepan on medium heat with the cream and using the back of a metal spoon squash and breakup the tic-tacs into the cream.
  7. Stir the tic-tac mix until all the tic-tacs have disintegrated and combine with the cream.
  8. Add the chocolate and stir until the mix is smooth and well combine.
  9. Place the mix into a small bowl and into the fridge for 3 hours to set.
  10. Meanwhile place the desiccated coconut into a bowl, the orange sprinkles into a 2nd bowl and the green sprinkles into a 3rd bowl.
  11. Once the mixes are firm scoop out a 15g piece of peppermint mix, rolling in your palms to create the truffle ball.
  12. Place the truffle ball in the green sprinkle bowl and shake the bowl to coat the ball in sprinkles completely. Place onto a clean plate.
  13. Continue with all the peppermint truffle mix and sprinkles.
  14. Scoop out a 15g piece of the mandarin mix rolling in your palms to create a truffle ball.
  15. Place the truffle ball in the orange sprinkle bowl and shake the bowl to coat the ball in sprinkles completely. Place onto a clean plate.
  16. Continue with all the mandarin truffle mix and sprinkles.
  17. Lastly, scoop out a 15g piece of the tic-tac mix rolling in your palms to create a truffle ball.
  18. Place the truffle ball in the coconut bowl and shake the bowl to coat the ball in coconut completely. Place onto a clean plate.
  19. Continue with all tic-tac truffle mix and coconut.
  20. Place the plates in the fridge until ready to serve by arranging neatly on a plate or as desired. Enjoy!

NOTE: If you don’t have green sprinkles you can blitz icing sugar and green food coloring in a food processor and roll the balls into the mix.

This recipe is actually one that took quite a bit of research and took many attempts to get it tasting perfect. The challenge I set myself was to replicate the taste of a Rainbow flavored Paddle Pop ice-cream.

My first attempt was a cake, followed by a slice and then somehow I came up with the idea of making truffles.

The idea of replicating a Rainbow flavored Paddle Pop cake came recently realising that many people I know name the Rainbow Paddle Pop as their childhood favorite ice-cream treat. In particular the flavour, which being ‘rainbow’ is actually a research piece in itself.

In my research I came to understand that the flavour is actually a mix of caramel + a small touch of vanilla and a slight treacle hit…which is not an easy flavour to reproduce (hence all my failed attempts)!

As the rainbow colour was hard to produce in a truffle (completely easy in the cake version), I decided to give the truffles their famous colours through the use of 100’s & 1000’s.

I encourage you to eat a rainbow paddle pop, then one of these truffles and you be the judge!

 

Ingredients:

  • 100g brown sugar
  • 60g butter
  • 200g sweetened condensed milk
  • 30g liquid glucose
  • 20g golden syrup
  • 100g white chocolate
  • 100g plain sweet biscuits (I used Marie)
  • 1 egg
  • 150g 100’s & 1000’s

 

Method:

  1. Place the sugar, butter, milk, glucose, golden syrup and chocolate in saucepan on medium heat on the stove.
  2. Using a hand whisk mix the ingredients until well combine and boiling.
  3. Reduce the temperature to low/medium until the mix thickens, then remove the saucepan off the heat.
  4. Place the biscuits in a food processor and blitz until the mix resembles fine breadcrumbs.
  5. Add the biscuit mix into the caramel mix and stir until well combine, place the mix into a clean bowl and into the fridge 20 minutes or until cold.
  6. Pour half the 100’s & 1000’s into a bowl.
  7. Place the egg whites in another bowl and beat with a hand whisk for 30 seconds.
  8. Using your hands roll the caramel mix into 20g sized balls.
  9. One at a time place the truffles into the eggwhites until completely coated, then followed by placing into the 100’s & 1000’s bowl.
  10. Shake the bowl to cover the truffle completely in the 100’s & 1000’s, and then place on a plate. Continue with half the truffles.
  11. Disregarded the 100’s & 1000’s in the bowl and pour in the fresh remaining (the old 100’s & 1000’s will be much less effective if you continue with not renewing them).
  12. Continue with remaining truffles of egg and 100’s & 1000’s.
  13. Place the plate in the fridge to set for 1 hour, enjoy.

 

Notes:

  • Don’t worry if you caramelize some of the mix slightly too much on the bottom of the saucepan. The biscuits and 100’s & 1000’s will cover this up for you.
