Festive Popcorn Honey Bark

This recipe was inspired by playing around with left over ingredients that I had in the cupboard from previous bakes that I wanted to turn into something. I hate wasting food and tend to buy quite a lot of ingredients in which I only use ¼ of for a recipe.

Therefore I decided to make my own version of ‘chocolate bark’, but instead of using chocolate as the base I would use caramel and instead of the usual nuts, seeds and dried fruits that go into ‘bark’, I opted for what I had in the cupboard.

I made 5 different varieties where this recipe I am posting was the star from the afternoon of experimenting.

Marshmallow, popcorn, coconut and white chocolate came close but it was the coconut, cranberry, orange, almond, popcorn and white chocolate recipe that was the tastiest.

Ingredients:

Popcorn mix:

  • 40g popcorn, pre-popped and lightly salted
  • 50g flaked coconut
  • 50g cranberries, diced
  • 1 tsn orange zest
  • 40g roasted almonds, finely diced

Caramel:

  • 40g butter
  • 120g honey
  • 160g sugar
  • 1 tsn bi carbonate soda

Extra:

  • 50g white chocolate

 

Method:

  1. Line a 25cmx25cm slice tin with baking paper.
  2. In a bowl place the popcorn, coconut, cranberries and zest, stir to combine.
  3. In a saucepan place the butter, honey and sugar on a medium heat, stir until combine.
  4. Turn heat to high until golden and thickened. You will know the caramel is done when you stir a spoon in the mix and place it in a cup of cold water, if the caramel is hard it’s ready.
  5. Take off the heat and add ½ tsn of the bicarbonate soda to the mix and stir.
  6. Add the almonds and stir.
  7. Pour the caramel mix into the prepared tin, ensuring even distribution.
  8. Working quickly sprinkle the popcorn mix over the caramel as evenly as possible and flatten with palms and fingertips to ensure the mix is in the caramel.
  9. Place slice in the fridge to set for 15 minutes.
  10. Meanwhile place the white chocolate over a double boiler and melt the chocolate.
  11. Drizzle the melted white chocolate on the bark and place back in the fridge for 30 minutes or until the white chocolate is set.
  12. Cut the bark into slices and enjoy.

I have recently been inspired by the old fashion way of making ice-cream, in which entails a thick and creamy custard base. These days vegetable oil has become the base, which is unhealthy, and 100% fat!

As the traditional method actually delivers on rich and scrumptious dairy goodness I decided I would take this theme and make a tasty ice-cream that has minimal processed elements that is packed with body loving protein. I also wanted to make sure the recipe was super easy and can be done really quickly.

Now this is actually quite a lot that the recipe will need deliver on so I created 4 different versions with differing volume ratios of ingredients and varying flavor combos.

After a bit of trial/error and testing/learning I found the recipe I was looking for.

The custard uses custard powder, meaning it takes a whole of 5 mins tops to make. Protein powder and peanuts/peanut butter provides the high protein kick with only natural good oils, while the sweetness has been delivered via natural honey. The only really naught element here is the small amount of caramel on the popcorn.

A really tasty and satisfying treat that takes only minutes to make with minimal effort!

 

Ingredients:

Custard:

  • 480ml milk (I used low fat, but up to you)
  • 25g custard powder
  • 20g honey

Ice-cream:

  • 500ml custard (recipe above)
  • 50g vanilla protein powder
  • 1 tsn vanilla essence
  • 10g honey
  • 240g peanut butter
  • 40g chopped peanuts
  • 120g caramel popcorn, roughly chopped (I used store brought)

 

Method:

  1. Place the custard ingredients into a bowl and whisk with a hand whisk until combine.
  2. Place the bowl in the microwave for 5 minutes or until the mix resembles a thick custard texture, ensure you whisk in between every minute of cooking.
  3. Allow the custard to sit for 5 minutes then top with plastic wrap. Leave the mix aside to cool to room temperature.
  4. Add to the custard the protein powder, essence, honey and peanut butter, stir.
  5. Place the custard mix in a food processor and blitz until smooth and creamy.
  6. Transfer the custard mix into a large container and stir in the chopped nuts and chopped popcorn until well combine.
  7. Place the container in the freezer for 5+ hours to set.
  8. When ready to serve remove the ice-cream from the freezer and leave aside to soften slightly for 5 minutes.
  9. Scoop and enjoy.

For ages I have been meaning to make a cake that is the simplest to make imaginable. A cake that is fool proof and has only a few steps so my ‘not so savvy’ baker friends can produce a successful creation.

Now I have baked with many liquid ingredients over the years, soda, yoghurt, cordial, alcohol you name it so it’s no surprise that I have gone down the melted ice-cream avenue for this recipe.

However this is not as silly as it sounds. Ice-cream is made of cream/milk, eggs, sugar (sometimes vanilla and salt). Looking at these ingredients these are all core ingredients in a cake batter where all that is missing is the flour….So if I melt my favorite ice-cream and mix it with flour I could produce the most simplest, fool proof, amazing tasting, flavor adaptable (use which ever ice-cream you desire) 5 minute cake.

Baked Ice-Cream Cake Slice recipe
 

Ingredients:

Cake:

  • 500g ice-cream (I used Salted Caramel Popcorn flavour)
  • 225g flour

Icing:

  • 330g ice-cream
  • 160g butter
  • 180g icing sugar

 

Method:

  1. Pre-heat the oven to 180c degrees and line a 25cm cake tin with baking paper.
  2. Place the ice-cream in a bowl and leave to melt completely.
  3. Add the flour to the melted ice-cream and with a hand whisk stir until well combined.
  4. Pour the mix into the cake tin and bake for 35 minutes or until a skewer inserted in the center comes out clean.
  5. Meanwhile to make the icing place the ice-cream in a saucepan on the stove on a high heat.
  6. Stir for 5 minutes until the mix becomes a thick caramel, set aside.
  7. Beat the butter and icing sugar for 2 minutes until light and fluffy.
  8. Add the cooled caramel and using the electric beaters again beat until well combine and fluffy.
  9. Once the cake is cooked leave in the tin for 5 minutes then on a cooling rack.
  10. Once the cake is cooled cut in half horizontally and top each cake layer with the icing.
  11. Place one layer on top of the other and enjoy.

Popcorn Biscuits

So before I go into the next recipe post I wanted to take the time to acknowledge all the amazing people out there that have communicated to me via commenting on my blog.

There have been moments where the beautiful feedback has really been refreshing for me to continue experimenting further to new levels and puts a massive smile on my face.

Therefore as you encourage me I encourage you to continue the beautiful feedback as well as ideas on ingredients you would like me to experiment with.

Generally I focus on an ingredient or 2 that I go crazy coming up with recipes around until I finally construct a gem that is blog-worthy. It’s generally an ingredient that I have not incorporated in cooking before. At the moment is lavender and pomegranate (stay tuned on this – my lavender recipe will wow your socks off). So without futher ado…

 

Popcorn Biscuits

I have been noticing that the supermarket has started to stock salty and sweet popcorn. This got me thinking back to the salty and sweet trend again and how I trial with this again.

Now I have cooked with popcorn before (see my popcorn slice recipe), but not in the sense of highlighting salt and sweet so I decided to use this ingredient and produce a tasty treat. I contemplated a cake but figured the popcorn would disintegrate while in a moist long cooking period (maybe something I can revisit and experiment with at a later date)…

Therefore below is my recipe for the ever so simple and quick Popcorn Biscuits.

 

  • 250g butter
  • 130g sugar
  • 80g condensed milk
  • 300g plain flour
  • 1 + ½ tsn baking powder
  • 5 cups popped butter flavor popcorn

Method:

  1. Pre-heat oven to 160c and line 3 big baking trays with baking paper.
  2. With electric beaters beat the butter and sugar for 5 minutes until light and creamy.
  3. Add the milk and beat for another few minutes until smooth.
  4. Add the flour and baking powder to the mix and stir.
  5. Add the popcorn to the mix, crumbling into small popcorn pieces as you add.
  6. Using hands mix until well combine.
  7. Roll mix into balls with hands to small golf ball sizes (30g in size).
  8. Place balls on the trays and slightly flatten with hands.
  9. Bake for 18 minutes or until golden.
  10. Once cooked place on a rake to cool.

Notes:

  • If your not a fan of the sweet and salty you can use plain popcorn but you will loose a layer of the biscuit flavor.

Popcorn Slice

Popcorn Slice

This recipe doesn’t feature any usual ingredients (apart from baking with popcorn, which is a little off-center). However the texture of this slice is very interesting and we all know that you can’t go wrong with chocolate and caramel.

 

Ingredients:

  • 250g butternut snap biscuits
  • 175g butter
  • 395 sweetened condensed milk
  • 40g salted popcorn
  • ½ cup desiccated coconut
  • 185g milk chocolate

 

Method:

  1. Line a 25cm square baking tin with baking paper.
  2. Process the biscuits and 125g melted butter until combined. Press the mix into the cake tin and refrigerate for 30 minutes.
  3. Combine the condensed milk and 30g butter in a pan on the stove stirring over a medium heat for 10 minutes until the mix turns to caramel.
  4. Take off the heat and add in the popcorn and coconut stirring quickly.
  5. Transfer the mix into the cake tin and press with wet hands to flatten.
  6. Melt the chocolate with 20g butter until you have a smooth consistency then pour over the popcorn layer.
  7. Place back in the fridge for 30 minutes, cut and serve.

 

Notes:

  • For a more intense chocolate flavor you can use chocolate biscuits instead of butternut snap biscuits.
  • This recipe does not involve an oven only a fridge to set.
